Rosie Birkett was invited to a special Chinese New Year celebratory dinner by Lee Kum Kee. The guests were taught all about the history of oyster sauce and the traditional symbolism of the foods: fish for prosperity; chicken for fortune and noodles for longevity – be sure not to cut them!

The legendary chef Ken Hom, best known for popularising Chinese food in the UK, cooked a feast for the guests using Lee Kum Kee sauces including silky pork dumplings with chiu chow chilli oil, peppers stuffed with pork and prawn, steamed salmon with fermented bean and spring onion.
