Auberge du Lac has taken gin infusion to the next level with its latest creation – the Seaweed G&T – now available on the restaurant’s signature cocktail menu.

Restaurant Manager, Pedro Miramon, first came up with the idea when he saw seaweed being delivered to the kitchen for a new beef dish on the menu. After convincing the Head Chef to part with some of his expensive ingredient, Pedro headed straight for the gin and began folding the seaweed in.

After two weeks of watching a bottle of gin slowly turn a light shade of green, the top was un-screwed, and we were immediately transported to the seaside! After much experimentation, the deliciously refreshing Seaweed G&T was created – it truly is a drink that everyone needs to experience…so hotfoot it to Hertfordshire right now!
